Maui Rice Pudding

This is a recipe I created and made several times while we were in Hawaii this past summer.  I thought about it today as I was telling myself summer will return!  If you have a fun new recipe that you'd like to share with the sisters, send me an email via this blog and I'll pass it along.

Maui Rice Pudding
Ingredients:

3/4 C jasmine rice (uncooked)
1 can coconut milk, plus enough regular milk to equal 2 Cups total
1/3 C sugar
1/4 t salt
1 egg
1 T brown sugar
1 T butter


Directions:
Cook rice in 1-1/2 C water.

Combine 1/2 Cup of milk mixture with egg.   Set aside.

In large sauce pan, combine remaining 1-1/2 C combine milks, sugars, salt, and 1-1/2 C cooked rice.   Cook over medium heat stirring occasionally until it begins to thicken (about 10 minutes).  

Add egg mixture, stir for an additional 2 minutes and remove from heat.   (The egg will thicken the pudding.)   Stir in butter.

Serve hot or cold.   Reheats fantastic.

Extra yummy:   Sprinkle a tiny bit of fresh nutmeg and some toasted fresh coconut over individual servings.
