~Too many Zucchini? Try this Weight Watchers recipe for ZUCCHINI FRIES:

1 tsp Italian seasoning, 1 ½ T. flour, ¾ tsp. salt, ¾ cup dried bread crumbs, 2 medium zucchini (7 inch) cut into 4 chunks, then halve each chunk, 2 large egg whites whipped until frothy (almost soft peaks)
Preheat to 475, coat baking sheet with cooking spray. Mix Italian seasonings, flour and salt. Place bread crumbs in another bowl. Dredge zucchini in flour mix, then dip in egg whites, dredge in breadcrumbs. Place on baking sheet and liberally coat with cooking spray. Roast, turning once, about 12 minutes. Can also use for any summer squash, eggplant, onion rings or green tomatoes.
